How Psyllium is used

The most valuable part of psyllium are the seed husks, i.e. the very thin cuticle that covers the seeds produced by the plant. These husks contain a huge amount of valuable water-soluble plant fibres along with a mucilaginous substance that has hydrophilic characteristics, i.e. it can absorb and retain a lot of water and create a gelatinous mass.
For these reasons, psyllium is in effect a thickening agent, which imparts viscosity, has colloidal stabilising and water retention properties, and improves the stability of emulsions.

Use of Psyllium in the food, nutraceutical, and feed sectors
Due to its binding properties, it is used to improve the softness, whilst giving structure to bakery. doughs, particularly in gluten-free recipes. It isalso used as a basic stabiliser in the production of ice cream and as a thickener and binder in the production of meal replacement products, as it improves and enriches the overall taste sensation.
The use of psyllium husk powder, which is the flour obtained by crushing dried husks, is also an increasingly popular ingredient in the processed meat industry and in the production of meat substitutes because it improves product texture, the water-holding capacity, and cooking yields without affecting the flavour, appearance, and safety of the food.
There are also countless uses in the nutraceutical sector. Psyllium is a natural source of fibre that has beneficial physiological effects on the body: for example, it promotes intestinal transit and has an emollient and soothing effect on the digestive system. It also has a prebiotic effect, and its use is helpful in modulating and limiting nutrient absorption as well as being an ally for lipid and carbohydrate metabolism.
